This season, Jin Ting Wan introduces its first-ever seasonal tasting menu, centred on rare mushrooms foraged from Yunnan’s highlands. Among the treasures: intensely aromatic Matsutake, gelatinous Golden Fungus, and the elusive Ganba Fungus. Dishes like Marinated Porcini Mushroom and Scallop with Scallion Sauce (S$98++) and Fried Rice with Ganba Fungus and Honey Pea (S$168++) offer complex, earthy depth. The finale? A soothing Double-Boiled Bird’s Nest with Morel Mushroom and Honey (S$98++), as nourishing as it is poetic.

From 15 September to 31 October, Mott 32 celebrates one of Asia’s most luxurious ingredients with its Exquisite Deluxe Abalone Set Menu (S$368++). Highlights include wine-scented chilled abalone, a umami-rich Fish Maw & Conpoy Soup, and the pièce de résistance: Braised Whole South African Abalone with Broccoli. Each course is a study in technique and indulgence, concluding with a delicate Bird’s Nest Tart and Guava-Pomelo Sago.

October’s Chef’s Table at Waku Ghin celebrates seasonal Japanese produce at its peak. Expect early-harvest Matsutake mushrooms grilled with kabosu citrus, or Kagoshima Kanpachi paired with roasted capsicum. At the Bar, enjoy a chilled Sodeika Capellini or the crispy Aquina Murray Cod with Dutch cream potatoes and pickled eggplant. At Yardbird Southern Table & Bar, October means weekly rotating fried chicken specials. Highlights include Spiced Coconut Chicken (Oct 1–7) paired with a Mango Vice cocktail, Lemon Pepper Chicken (Oct 8–14) with the South Side Fiz, and Hot Honey Chicken (Oct 22–31) balanced with Black Berry Bourbon Lemonade. Available à la carte for S$38++ or S$44++ with drink pairing.

From 3 to 5 October, Dubai’s Mimi Kakushi brings 1920s Osaka glamour to WAKUDA Singapore with a cocktail pop-up. Try the Tsumabiki (a citrus-forward aperitif) or Sayonara, a refined Negroni twist. From 22 Sep to 12 Oct, WAKUDA also unveils its own F1-themed cocktails: the Marina Circuit Martini, Hammer Time Old Fashioned (with wagyu tallow), and Corsa Sour with Suntory Old.
