At the centre lies Chef Sam Chong’s citrus dressing, crafted from freshly squeezed orange and lemon juice and gently reduced to intensify its fragrance. At the height of the celebration sits the Opulent Set Menu, a statement of festive indulgence. Highlights include Double boiled Collagen Soup with Shark’s Fin, Crab Meat and Prawn Dumpling, Steamed Red Garoupa prepared in classic Hong Kong style, and Stir fried Australian Lobster with Glutinous Rice Wine Sauce, where gentle fermentation lends layered warmth. Old hen is slowly simmered into a full-bodied broth before prized fish maw, scallop and wild tribute chrysanthemum are introduced, resulting in a silken, aromatic soup traditionally associated with nourishment and well being.
