    The Hong Kong flagship opened with a soft launch on 7 March 2026 at Sugar+, Causeway Bay’s vibrant lifestyle hub.     The Art of Tanrei Ramen

    At the heart of Ramenya Shima’s culinary identity lies its celebrated tanrei-style broth, known for its light, crisp and crystal-clear character. Prepared fresh each day, the broth is crafted from nearly 30 premium ingredients including Japanese chicken, scallops, clams, aged bonito flakes, sea bream head, kombu and fresh vegetables. The result is a deeply layered soup base rich in umami yet remarkably refined in flavour.

    This carefully prepared base is then transformed into three distinctive broth styles. Shoyu ramen features a blend of raw soy sauce and 11 carefully selected varieties of soy sauce, simmered at precise temperatures to unlock depth and complexity. White Shoyu ramen offers a more aromatic profile enhanced with white truffle oil and black truffle paste. Meanwhile, Shio ramen highlights the purity of the broth through a delicate seasoning that lets the natural ingredients shine.

    Handmade Noodles and Signature Chashu

    Chef Morishima’s ramen noodles are crafted fresh each day using a secret recipe developed from five premium Japanese flours anchored by Hokkaido’s Kitahonami winter wheat. Free from additives and alcohol, the noodles deliver a balanced texture of springiness, smoothness and satisfying chew, designed to harmonise perfectly with the clear broth.

    Complementing the ramen are five distinctive chashu preparations that showcase the chef’s technical precision. Braised Pork Chuck Roll Chashu is gently braised for four to six hours to achieve deep flavour and tenderness, while Grilled Pork Belly Chashu is simmered before being seared over charcoal for a smoky finish. Slow-cooked Pork Loin Chashu is prepared over 12 hours for a soft texture, while Smoked Pork Chashu is roasted and finished with Japanese cherry wood smoke. For a lighter option, Slow-cooked Chashu Chicken is marinated and gently cooked to create a delicate savoury bite.

    Four Ramen Creations to Explore

    The Hong Kong flagship presents four ramen options, each paired with the diner’s preferred broth. Wonton Ramen features handmade shrimp and pork wontons and is priced from HK$118. Chashu Ramen highlights slow-cooked pork loin, braised pork chuck roll and chicken chashu, also from HK$118. Premium Ramen, from HK$138, combines grilled pork belly, chicken chashu, pork loin chashu, braised pork chuck roll chashu and shrimp wontons.

    For the most indulgent experience, Ultimate Ramen from HK$158 brings together grilled pork belly, chicken chashu, pork loin chashu, braised pork chuck roll chashu, smoked pork chashu, shrimp wontons, pork wontons and a soft-boiled egg. Guests can also enhance their bowl with additional toppings or enjoy the broth alongside Japanese rice for HK$28.

    Exclusive Dishes Beyond Ramen

    Beyond ramen, Ramenya Shima Hong Kong introduces exclusive rice dishes and small plates designed to showcase Chef Morishima’s culinary versatility. Highlights include Diced Chashu Donburi priced at HK$58, Fried Chicken Nanban Donburi at HK$68 and the luxurious Truffle Oil and Akatsuki Egg Donburi also priced at HK$68.

    Snack options include Homemade Japanese Pork Dumplings at HK$38, Chicken Nanban at HK$48 and Vegetable Salad with the chef’s special dressing at HK$38. The meal can conclude with Almond Panna Cotta at HK$28, a silky dessert that offers a refreshing finish.

    During the soft opening period, beverages include Shinsyu Apple Cider and Mountain Fuji Yuzu Citron Cider priced at HK$58 per bottle, alongside oolong tea and assorted soft drinks priced at HK$32 per bottle. Alcoholic beverages will be introduced at a later stage.

    An Intimate Ramen Haven in Causeway Bay

    Spanning nearly 1,200 square feet, the Hong Kong flagship offers counter seating for 24 diners, creating an intimate setting where guests can watch the ramen preparation unfold. A minimalist exterior adorned with traditional Japanese noren leads into interiors that blend modern design with classic Japanese aesthetics through warm wood tones and refined artistic accents.

It began with a tranquil evening in Gubei Water Town (古北水镇), a serene resort nestled at the foot of the Great Wall, where history, luxury, and reflection coalesce. Located just 2.5 hours from Beijing, this little-known gem offered not just a place to stay, but a gateway to one of the most untouched and profound Great Wall experiences you can have: a night trek on Simatai.

    Gubei Water Town: Old World Meets New Luxury

    Let’s talk about Gubei. Built at the foot of Simatai, this replica of a northern water town blends ancient architecture with modern comfort. Think boutique hotels with wooden balconies, lantern-lit alleys, hot springs, tea houses, and artisanal shops that make you feel like you’ve stepped into a Chinese period drama — minus the drama. While it may not be an authentic ancient town, its attention to design and atmosphere makes it the perfect base for cultural travellers looking for more than just a pit stop.

    From Gubei, you have direct access to the Simatai section of the Wall. This is rare, considering most Great Wall experiences require a long detour or day trip. Here, you’re at the doorstep of something extraordinary — a piece of the Wall that hasn’t been sterilised for mass tourism.

    Dinner in Gubei, and a Decision Made

    We arrived at Gubei Water Town in the late afternoon, just in time for a relaxing dinner before the climb. The cobbled lanes, traditional courtyards, and canal bridges lent the village an ethereal charm — think Venice meets ancient China. As night approached, I prepared to ascend Simatai by cable car. My mother, ever the wise traveller, decided to stay behind at our restaurant to soak in the quiet energy of the place. Trekking the Wall at night isn’t for everyone — and that’s the beauty of it. It gives you space, not just to move, but to feel.

    Ascending into the Darkness

    With the sun setting and the sky turning velvet, I boarded the cable car that would carry me partway up Simatai. As I rose above the tiled rooftops of Gubei, the Great Wall slowly emerged, snaking like a shadow across the jagged ridgelines. There were no crowds, no loudspeakers, just the hum of the lift and my breath catching in quiet anticipation.

    At the top, oil lamps lit the path like fireflies, flickering orange against the stone. The effect was nothing short of cinematic. This wasn’t just sightseeing — this was something older, quieter, and far more introspective.

    Simatai: History You Can Still Hear

    While many sections of the Great Wall have been restored to pristine tourist-ready form, Simatai is known for its authenticity. Built during the Ming Dynasty in the 14th century, this stretch of the Wall has retained much of its original stonework. The stairs are uneven, the watchtowers partially crumbled, and the ridges steep — and that’s what makes it so powerful.

    Simatai runs approximately 5.4 kilometres with 35 watchtowers, but the night trek only opens a designated portion for safety. What you get is still deeply evocative — a vertical climb through layers of empire, solitude, and symbolism. Unlike Badaling or Mutianyu, which cater to convenience and camera angles, Simatai offers something rare: vulnerability. The path isn’t manicured. The silence isn’t staged. The experience isn’t filtered. It’s just you and the Wall, both standing quietly in the dark.

    Most people climb for the view. But here, at night, the view disappears — and something else emerges. The absence of distraction sharpens your senses. The crunch of gravel underfoot, the flicker of your own lantern, the pulse in your chest as you ascend — they become your reality. There are no sweeping vistas to photograph. No validation in likes or views. Instead, there’s a grounded sense of being. And in that groundedness, something powerful clicks into place.

    Before descending, we were treated to a stunning drone performance — hundreds of LED-lit drones dancing in synchrony over the Wall, forming shapes that paid tribute to China’s cultural heritage.     Somewhere along the trail, I realised this wasn’t just a trek. It was a reminder. Not every moment needs to be captured. Not every triumph needs a witness. Simatai, in all its darkness and honesty, showed me the quiet strength of simply moving forward — no spotlight, no applause.

    How to Plan Your Simatai Night Trek

    • Stay: Base yourself at Gubei Water Town Resort (水镇大酒店) or one of the boutique lodgings within the village. Most are walkable to the cable car station.

    • Tickets: Night trekking requires a special Simatai Night Access Ticket. These can be purchased via Gubei Water Town’s official website or through your hotel.

    • Transport: From Beijing, arrange a private car or take a shuttle bus to Gubei. The journey takes 2.5–3 hours depending on traffic.

    • Timing: Arrive at Gubei by afternoon. Most night climbs begin at dusk, followed by the drone performance around 8–9 PM.

    • What to Wear: Lightweight hiking shoes, breathable activewear, and a small backpack. Leave the big camera and tripods behind — this one’s best absorbed, not documented.

    Dining onboard the Century Oasis was an adventure of its own. The main dining room offered a delightful variety of international favourites alongside regional specialities that celebrated the flavours of the Yangtze region. Each meal was crafted with care, featuring fresh, high-quality ingredients and artful presentation. Complementing the dining experience, beer and wines flowed freely, ensuring a perfect pairing for every dish.

    We chose to upgrade to VIP dining, which provided access to a private dining area conveniently located on the same floor as our cabin—a thoughtful perk that made mealtimes especially easy for my mom. The VIP dining room featured an elevated menu, live cooking stations where you could customise your orders, and a more intimate setting. Watching chefs prepare dishes to your preferences added an interactive and personalised touch to the experience.

    While the VIP option included exclusive dishes and added conveniences, we found the standard dining experience to be just as satisfying, offering a wide range of delicious and thoughtfully prepared dishes. The availability of free-flow beer and wine in both dining options ensured that all guests enjoyed a premium experience.

    One of the most memorable moments was enjoying afternoon tea sessions in the VIP lounge. Though the cakes were not free-flow, the artisanal teas paired beautifully with the selection of treats, and the backdrop of the majestic Three Gorges made every sip and bite feel special.

    Whether dining in the main dining room or the VIP area, every meal onboard was a highlight of our journey.

    Scenic Narration On The Sky Deck

    One of the most memorable moments onboard was the narrated tour from the Sky Deck as the ship glided through the breathtaking Three Gorges. With a cool breeze and unobstructed panoramic views, we marvelled at the towering cliffs of Qutang Gorge, the narrowest and most dramatic of the gorges, with its steep walls rising high above the river.

    As we sailed into the tranquil Wu Gorge, renowned for its ethereal mists and verdant peaks, the guide shared fascinating tales of the legendary Twelve Peaks of Wu, including the famous Goddess Peak. The final stretch, the expansive Xiling Gorge, showcased a stunning interplay of rugged cliffs and serene waters.

    The onboard narration brought these landscapes to life, weaving in history, myths, and geological insights, making the experience not just visually spectacular but deeply enriching. Standing on the Sky Deck, surrounded by the majesty of nature, was an unforgettable highlight of the journey.

    Excursions That Enrich the Journey

    The Century Oasis also offered incredible shore excursions that complemented the luxury of the cruise. A visit to the Tribe of Three Gorges at Xiling Gorge allowed us to explore charming villages and witness a traditional marriage ceremony reenactment. The performance, set against the stunning backdrop of the gorge, highlighted the deep connection between local culture and the river.

    Another standout experience was the ship lift at the Three Gorges Dam. This engineering marvel, which elevates vessels 113 metres, offered a unique perspective on China’s innovation and provided stunning views of the surrounding landscape.

    Floating through the serene Shennv Stream, also known as the Goddess Stream, was equally captivating, with its crystal-clear waters and lush scenery evoking a sense of tranquillity. Depending on your cruise package, shore excursions may differ accordingly.

    Onboard Activities and Relaxation

    When we were not enjoying the views from our stateroom, heading out for excursions or dining on delicious meals, the ship’s facilities provided plenty of options for relaxation and entertainment. The performance hall offered cosy evenings with performances and curated films, while the wellness centre invited us to unwind with spa treatments.

    Evening entertainment onboard features traditional music, dance, and art forms, offering a cultural glimpse into the rich heritage of the Yangtze region. However, if you are accustomed to the polished productions of Royal Caribbean or Dream Cruises, it is important to adjust your expectations, as the performances here are more modest and have an amateur charm. If you enjoy Mahjong, chances are you will be spend hours bonding with your loved ones in one of these cosy rooms.

The new cars join the hotel’s already-legendary collection of exquisite vehicles – which includes 14 Rolls-Royce Extended Wheelbase Phantoms and a magnificently refurbished 1934 Phantom II.

    The arrival of the new vehicles at The Peninsula Hong Kong was greeted in a grand celebration. The handover ceremony at the hotel’s forecourt on 26 November 2024, was held in the presence of The Hon. Sir Michael Kadoorie, Non-Executive Chairman of The Hongkong and Shanghai Hotels, Ltd. (HSH), who received the keys to the new Bentayga EWB Azures from the CEO of Bentley Motors, Dr. Frank-Steffen Walliser.

    “The acquisition of these vehicles is a truly momentous occasion for The Peninsula,” said Joseph W.Y. Chong, Regional Executive Vice President, Asia, and Managing Director of The Peninsula Hong Kong. “Not only does it align with our legacy of offering the finest available transport to our guests; it also reflects our dedication to providing them with unparalleled experiences at every turn.”

Both the Bentley Bentayga EWB Azures and the hotel’s four new bespoke Toyota Alphards epitomise a new generation of extra-spacious and sporty transport for guests of The Peninsula Hong Kong.

    The Bentayga EWB Azure is a super SUV whose striking design and expansive interiors offer unparalleled comfort to passengers. The hotel’s vehicles feature custom bodywork in signature Peninsula green, with hushed self-closing extended rear doors, and opulent inner compartments with custom-quilted seat backs, veneered picnic tables, individual entertainment screens, a rear control panel, signature audio systems, and Bentley mood lighting. Bespoke extras include a rear-seat massage function, dual wireless chargers in the front and rear seats, and spacious leather-clad luggage compartments.

    The hybrid-electric Toyota Alphards, meanwhile, offer ample and eco-friendly transit for family and executive groups. Each has the capacity to seat 6 passengers and is equipped with a myriad of customised Peninsula extras. These include handheld remote devices for climate control, seats, and lighting, as well as a massage function in the middle rear seats; additionally, a state-of-the-art JBL sound system and a heads-up display showing speed and maps adds both convenience and entertainment during rides.

    A Legacy of Superb Transport

    Luxury cars have been associated with The Peninsula Hong Kong since the hotel’s earliest days, when the local Studebaker dealership and showroom were located in the rear of the East Wing. The hotel operated its own taxis for many years, before introducing its very first fleet of 5 Lincoln Continentals, a Ford Galaxie, and a station wagon.

    In 1970, as part of its continuous efforts to offer guests the most stylish available transport, the hotel made a momentous purchase: a fleet of 7 Rolls-Royce Silver Shadows. The order was the largest ever placed with Rolls-Royce for a single model, and made headlines all over the world. In ensuing years, The Peninsula subsequently broke its own record several times, each time updating its fleet with new collections of splendidly customised Rolls-Royce sedans.

    In 2006, the hotel made Rolls-Royce history once again with its acquisition of the 14 Extended Wheelbase Phantoms that still hold pride of place in its fleet. Each of these cars has been impeccably customised to Peninsula specifications, with interiors finished in rich leather and burled walnut, and thoughtful details like customised tread plates, umbrellas, extra capacious luggage compartments, and cooling boxes for chilled hand towels.

    The new weekend brunch captures a nostalgic essence that aligns perfectly with Chef Chau’s culinary philosophy of exquisite presentation, innovative concepts and authentic recipe offerings. His dim-sum creations are a testament to his meticulous craftsmanship, honouring the centuries-old culinary art while incorporating a tinge of innovation. Revisiting favourites from the past five decades, the menu presents cherished dishes that have gradually disappeared from Hong Kong’s culinary scene due to their intricate preparation.

    Back to the ’80s Dim Sum Brunch” (served from 12 noon to 3pm, HK$588 per adult and HK$488 for children aged three to 11) begins with Chef Chau’s ‘Five Fortune’ appetiser of five tantalising creations on one inviting plate. A blast of sour-sweet flavours, Free Range Egg Mousse, Vinegar sees egg yolk smothered in velvety whipped-egg foam. Chilled Botan Shrimp, 20-year Huadiao is an umami Shaoxing wine-soaked treat; Hong Kong-treasured Jumbo Razor Clam bears a fiery Chilli kick; and the refreshing Italian Tomato, Seaweed, Vinegar marries tastes of Italy and Japan. A winning combination of pickled Scallion, fruity Roselle and tangy Vinegar rounds off the five taste-bud-awakening bites.

    Soup is the house signature Sea Cucumber, Winter Melon, Bamboo Fungus, Carrot Oil, Chicken Oil, Superior Soup, beloved for the richness of its collagen-packed chicken broth and the nutritious boost of the prized marine delicacy.

    The main is a choice from a tempting trio of dishes: Lobster, Sergestid Shrimp Sauce, Handmade Rice Flour Rolls, the most luxurious of cheung fun, freshly rolled, steamed and smothered in fragrant sakura-ebi sauce; Free Range Chicken, Wild Mushroom, Lotus Root, Chives, the freshest chicken dish imaginable, paired with vegetables of contrasting textures; and Premium Dried Abalone, Goose Web, Secret Recipe Sauce (add HK$298 per person), a gourmet’s dream – South African 33-head dried abalone stewed with chicken and Chinese ham, then slathered with Chef Chau’s special fish-maw accompaniment.

    The free-flow dim-sum selection comprises 11 savoury creations, with four being specially recommended. The chef’s childhood favorite, Siu Mai Quail Egg, receives a healthier twist with lean minced chicken replacing the traditional, oilier pork mince. Siu mai, first introduced during the Yuan Dynasty (1279-1368), holds a significant place in Hong Kong dim sum, and this unique variation featuring quail eggs evokes the charming dim-sum culture of the ’80s.

    The story of xiao long bao, a renowned soup dumpling, traces back nearly 150 years to the Shanghai suburb of Nanxiang. At CHINESOLOGY, the culinary team honours this heritage with its Minced Pork Xiao Long Bao dumpling, featuring a thin wrapper (less than 1mm thick) meticulously folded into at least 18 delicate twists.

This exquisite dish, once a humble street food in Beijing, rose to prominence during the Qing Dynasty court and subsequently became a beloved staple in ’50s-’60s Hong Kong dim-sum establishments. Chef Chau masterfully melds savoury flavours by simmering aged chicken and Yunnan Jinhua ham to create a rich broth, which is then combined with egg and encased in a golden batter. The result is a tantalising interplay of crispy, soft and liquid textures – a culinary marvel that Chef Chau modestly calls ‘bite-sized soup’.

    Known for its heart-warming qualities, congee plays an essential part in Hong Kong culinary culture. Chef Chau’s Wild-caught Mottled Spinefoot and 15-year-old Tangerine Congee delivers a delightful oceanic aroma without any overpowering fishy taste. He elevates the flavour profile by infusing the fragrant essence of aged peel from his personal collection. Top-quality tangerine peel, valued for its health benefits, is in limited supply, making it a prized ingredient.

    Translucent Har Gow, Tiger Prawn, Minced Pork, and the vegan-friendly Kale, Vegetable, Dumpling – enclosing green goodness instead of the usual prawn – are other delectable steamed treats. The light, multilayered coat of Mushroom, Pepper, Puff Pastry uncovers a savoury spiciness. Other fried wonders are Crispy Shrimp, Spring Roll with carrot and cabbage, and the syrupy crunch of the classic Guangdong village treat of Fried Wonton, Sweet and Sour Sauce (right) – due to the auspicious yuanbao (Chinese gold ingot) shape at its heart, this wonton is typically served at wedding banquets.

    You should also try their classics like Steamed Mini Sticky Rice with Minced Pork, Egg Yolk and Lotus Leaves, unveiling a fragrant combination of tender meat and egg yolk wrapped in lotus leaves, while Handmade Rice Flour Rolls, cooked with the chef’s secret recipe for Hong Kong XO sauce, presents an irresistibly umami-packed experience that is not to be missed.

    There are eight unlimited dim-sum dessert pleasures including two stellar sweet soups. Tragacanth Gum, Pistachio is the chef’s recommendation, a premium twist on almond or walnut that blends 40 handpicked Iranian pistachio nuts in each bowl and is thickened with natural tragacanth gum, a natural gum from tree sap. Pink Guava, Pomelo, Konjac soup swaps out the usual mango for super-sweet guava, with root vegetable jelly adding healthy texture.

    The much-travelled teahouse classic of Egg Tart is another recommendation, made by Chef Chau with Australian full-cream milk and homemade cookie dough in a faithful rendition of the authentic Hong Kong recipe that will evoke memories of the city’s past glories.

    Chinese puddings are headlined by Sponge Cake, Sugar, a white, fluffy steamed rice cake typically cut into triangles and bought from hawker stalls of yore. The house recommendation of Black Sesame Glutinous Roll is a ’70s and ’80s dessert tradition that reminds of an old-fashioned film roll; its 18 handmade layers and alluring sesame aroma conjure the spirit of old Hong Kong. Originating from Taishan in Guangdong and prepared like a cupcake but steamed in the bowl then left to cool, Cup Cake, Red Bean, Sugar Cane (right) is a nostalgic, chewy-textured, sweet rush of ubiquitous red bean.

    Equally enticing are the chilled delights of luscious Coconut Cake, Split Peas, which resembles panna cotta, and citrusy Passion Fruit Pudding, featuring a velvety texture enriched with healthy chia seeds and coconut milk. Both desserts offer refreshing indulgence.

    The “Back to the ’80s Dim Sum Brunch free-flow drinks option at HK$288 per person underscores CHINESOLOGY’s exuberant Tang-ren essence, reflecting the grandeur and glamour of the Tang dynasty when spirited feasts were all the rage, and heady Hong Kong in the booming 1980s.

    Three cocktails from the mixology team’s extraordinary collection fusing Chinese tradition with Western techniques are featured. Bamboo Punch(original price HK$128, right) stars Shanxi’s bamboo leaf-infused Chu Yeh Ching Chiew stirred with homemade five-spice cordial and sparkling wine. The West-East vibe continues with Southern Sidecar (original price HK$108), which blends VSOP Cognac with kumquat liqueur and ginger spice. The Florist, featuring Widges London dry gin, homemade jasmine and floral tea syrup topped up with tonic water, is exclusively served at the Weekend Brunch.

    Wine lovers can also complement the delightful dim-sum experience with fine French pours: sparkling Saint Louis Blanc de Blancs Brut, and Le Bosq Rouge or Blanc from Languedoc-Roussillon. Those in the mood for mocktails may sip CHINESOLOGY Lemonade (original price HK$90), an effervescent mix of lemongrass, lychee and sparkling water, or The Ruby (original price HK$90), a fruity cranberry, pineapple, orange passionfruit concoction fizzed by ginger ale.     Mondrian Hong Kong’s visually striking, innovative and iconic design is inspired. By people. People, like design luminary Karin Krautgartner of byKK Design, and an eclectic selection of inspirational local and international artists who are pushing the boundaries of creativity and imagination.

    The hotel’s design lead, Krautgartner ,was inspired by the captivating architecture, breathtaking views unique location of the property in relation to its surrounding water, a recurring feature in the hotel, as well as the rich history of Hong Kong’s lively fishing villages and the renowned tailors who ply their trade in the hotel’s vibrant Tsim Sha Tsui neighbourhood. All this was then interpreted as part of the Mondrian Brand’s positioning being a modern cultural fairytale, sleek & sculptural and an oversized imagination.

    Mondrian Hong Kong’s distinctive triangular windows with sweeping harbour and island skyline views formed the concept of each room as a private lookout, offering inspirational vistas and in- tensely personal connections with Hong Kong.

    “It is like standing on the bow of a ship and looking out at Victoria Harbour or Tsim Sha Tsui’s unique Neighbourhood,” says Krautgartner. “You can relax and witness the ever-changing elements of the city outside from the comfort of your own cocoon. Every moment of the day or night, sun or rain, is magical in a city like Hong Kong. You’re immersed in the spectacle, the vibrant life of the harbour, the neon wonderland beyond and the mountains framing the scene.”

    Krautgartner says the precinct’s exhilarating mix of old and new provided a rich vein of inspiration. The people who really inspired her were Tsim Sha Tsui’s famous tailors, with their sumptuous walls of fabrics, secret techniques and mysterious boxes full of needles, threads, buttons and chalk.

    This bespoke culture flows through all of the hotel’s guest rooms and suites; from the geometric perfection of the “curated wall”, inspired by sewing boxes and full of objets d’art and little treasures, to the minibar, concealed in a mirrored pedestal, with a black sewing box on top concealing snacks and amenities.

    The theme even continues into the lush bathrooms, clad in exquisite Ceppo di Gres tiles inspired by the pebbled beaches of Hong Kong’s outer islands. Here, the featured piece is an oversized two-piece mirror, stitched together with illuminated optic fibre ‘thread’.

    Mondrian Hong Kong – Sensory Arrival & Magical Journey

    You can step from Kowloon’s kinetic chaos into the sanctuary of the Lobby, with soaring ceilings and a stunning showpiece glass mosaic of a magical underwater dancers, based on the photography of Christy Lee Rogers. This is a transitional space where you can immediately dive into the world of Mondrian, entering an oversized portal under an arch, where a showstopping glass chandelier is alive with water bubbles.

    The fairytale engravings found the corridors, depicting a plethora of fantastical, chimerical underwater creatures, are inspired by Hong Kong’s surrounding water, and the city’s origin as a fishing village and its magical evolution. The lifts with multiple mirrors placed in a triangular formation conjure thoughts of the game ‘Tangram’, a Chinese invention and widely played throughout Hong Kong.

    On the 38th floor , AVOCA (which means the meeting of water) is colourful, eclectic, and theatrical. Here, the ‘lookout’ theme is carried to its logical conclusion, with highlights including a DJ desk that seems to float in mid-air, video installations, bold black and white flooring, sumptuous curtains, and murals by cutting-edge local street artists, glass and light art, and spectacular mirrored walls. Simple Bao, a self-taught artist born and bred in Hong Kong specializes in freestyle murals and illustrations. Her stunning piece for MONDRIAN HONG KONG features a water goddess-like figure intertwined with elements from the Hong Kong skyline, reflecting the imperfect beauty of water. And local visionary Wong Ting Fung has created a large scale black and white mural interpreting the views and neigh- bourhood surrounding the hotel

    And renowned local designer Joyce Wang has lent her creative touch to the interiors of Carna, the hotel’s flagship contemporary Italian steakhouse helmed by the ‘world’s greatest butcher,’ Dario Cec- chini, with a nose-to-tail concept. Wang’s vision has resulted in a celestial setting that exudes a truly distinctive ambiance. From the elegant marbled ceilings to the opulent curtains and the innovative utilization of lamp-light, every element is thoughtfully crafted to perfectly complement the cuisine and transport diners to a realm of pure ecstasy.
