This Mid-Autumn Festival, bask in the glow of the Harvest Moon with two mooncake collections available from 24 August to 29 September 2023: the Jade Signatures Mooncake Collection from The Fullerton Hotel Singapore, and The Clifford Pier Mooncake Tingkat (90th Anniversary Edition) from The Fullerton Bay Hotel Singapore. The Fullerton Hotel Singapore presents five sets of mooncake flavours, elegantly packaged in signature gift boxes, adorned with motifs of the auspicious peony and the magnificent peacock.

Jade Signatures Tea Series Baked Mooncakes

Launching this year, the Jade Signatures Tea Series Baked Mooncakes stays true to the Mid-Autumn tradition of pairing mooncakes with tea, with a quartet of elegant tea-infused flavours. Carefully crafted to draw out the complex aromas of roasted tea leaves, these subtly sweet creations are ideal for those who appreciate deeper, nuanced flavours in their mooncakes.

First amongst equals, the Assam Tea with Lemon, Mung Bean and Raisin Baked Mooncake is full-bodied and invigorating with a dash of bright tamarind and citrus notes, studded with raisins for texture and sweetness, while the Tie Guan Yin with Orange and Apricot Baked Mooncake has a buttery and nutty profile, enhanced with luscious notes of ripe summer fruit.

The traditional single yolk mooncake receives an update in this locally inspired rendition, crafted with the distinctive grassy-vanilla fragrance of pandan.

The Low Sugar White Lotus Seed Paste with Double Yolks Baked Mooncake makes its return as a set of four in the Jade Signatures Double Fortune Mooncakes. This symbolic staple contains two golden salted egg yolks encased in smooth white lotus seed paste.

For the best of both worlds, the Jade Signatures Classic Baked Mooncakes introduces two refreshing creations alongside the traditional single and double yolks mooncakes.

The new Milk Lotus Seed Paste with Macadamia Nuts and Dried Cranberries Baked Mooncake is rich in taste and texture, containing buttery macadamia nuts juxtaposed with bits of tart dried cranberry. Also making its debut this year, the Mango Lotus Seed Paste with Pineapple and Melon Seed Baked Mooncake is a vibrant pairing of tropical fruits, accentuated with melon seeds.

Each tiffin carrier contains four baked mooncakes in signature flavours that reflect Singapore’s diverse hawker cuisine. Combining seemingly contrasting ingredients and flavours – from nutty and spicy to fruity and sweet – they deliver a harmonious outcome that is at once familiar and surprising.

The Mixed Nuts with Satay Peanut Sauce Baked Mooncake brings a local twist to the classic Cantonese mixed nuts mooncake, with a mixture of almonds, macadamia nuts, walnuts, sesame seeds and melon seeds, sweetened with candied tangerine and melon. The umami-rich Salted Lotus with Hae Bee Hiam Baked Mooncake teases the palate with spicy dried shrimp paste, while the Assam Lotus with Mango Baked Mooncake offers a milder experience with tamarind tea-infused lotus paste and dried mango.

The collection is rounded off with Pandan Coconut with Chendol Baked Mooncake, made with desiccated coconut, pandan leaves and chendol ingredients, ground into a smooth and rich paste that is easy to enjoy.
