Racines Sofitel Singapore City Centre has been officially unveiled as the latest restaurant serving French & Chinese delicacies in the heart of Tanjong Pagar. The name Racines is the French word for Roots, which is eponymous to the culinary team’s inspirations and influences. It is the brainchild of the hotel’s Executive Chef Jean-Charles Dubois and the latest addition to the lion city’s vibrant dining scene. Racines features traditional French classics alongside refined local Chinese delicacies prepared by two distinct brigades of chefs using custom-built Marrone stoves from Italy.

“Racines’ menu is designed to take diners on an epicurean journey of authentic familiar flavours that are true to their roots with dishes that are handcrafted using the finest and sustainable produce and ingredients,” says Wouter de Graaf, General Manager of Sofitel Singapore City Centre. The restaurant offers daily buffet breakfast, set lunches and a signature à la carte menu option. Curated and themed champagne brunches on weekends will also be a part of Racines’ culinary attractions.

The restaurant’s unique DNA is evident and is celebrated in it’s two distinctive and totally autonomous cuisines – Gastronomie Française and Refined local Chinese Cuisine. Menu highlights include French classics such as Racines’ Signature Grenouille or Frog Legs served with Pan-Fried Pink Garlic, Parsley and Wild Mushroom Emulsion;

Traditional Lobster Bisque with Coral Oil, Basil Ravioli and Micro Cress;

Local Kale Salad with Baby Heirloom Tomatoes, Toasted Pumpkin Seeds in Passionfruit Vinaigrette; Fresh Australian Abalone with Capellini, Sea Urchin Sauce and Lemon Bread Crumbs;

Chargrilled Galician Octopus with Avocado, Lime Crème Fraiche and Smoked Sweet Paprika and Marrone Grilled Gourmet Meats including Australian Wagyu Beef Striploin.

Diners craving authentic local Chinese creations will be feted by Chef Andrew Ong’s signatures including Stir-Fried Spicy Szechuan Style Frog Legs; Sweet & Sour Kurobuta Pork; Singapore Style Sri Lankan Black Pepper Crab; Kung Pao Sakura Chicken with Peanuts, Dried Chillies and Szechuan Pepper and Nyonya Style Stir-Fried Calamari amongst other notable Chinese creations.

For a magnifique and sweet end to the dining experience, choose from a selection of mouth-watering desserts including Mousse Au Chocolat – Light Valrhona Mousse, Chantilly, Crispy Pearls;

Yuzu Tart with Lime, Butter Monte Crumble and Rice Crispies; and Racines’ Mango Sticky Rice.

Racines’ interactive and dynamic open-kitchen concept is designed to provide diners with a sensorial experience. Featuring floor-to-ceiling windows, the restaurant boasts a panoramic 180-degree view of Tanjong Pagar’s skyscrapers and traditional shophouses. A sprawling herb garden cocoons the restaurant, featuring the freshest produce used for both culinary and mixology purposes. Adorned with customised furniture and avant-garde lighting fixtures for understated elegance, Racines also features its own apiary courtesy of a specially designed bee hotel so guests can enjoy the freshest honey. Diners will be treated to the restaurant’s very own pâtisserie and gelato corner as well as state-of-the-art Weinz oven producing freshly-baked croissants and bread daily. Live stations providing charcuterie and the freshest garden salads are also available.

Located on level five of the hotel, Racines is easily accessible with direct lifts from Tanjong Pagar MRT and is situated at the hotel’s main lobby area. The restaurant which offers its signature à la carte menu also provides guests and diners with buffet breakfast, 3-Course Set lunches at $38++ inclusive of Nespresso coffee or TWG Tea on weekdays, and dinner daily. Curated and themed champagne brunches on weekends designed for the family to enjoy will also be a part of Racine’s culinary attractions.

The restaurant can seat a maximum of 136 diners and offers a dynamic and convivial space that can be configured to accommodate groups of various sizes. From 1 to 30 November 2017, the first 100 bookings for weekend brunch at Racines will enjoy an exclusive “Sofitel Gift” surprise. Also, enjoy a complimentary bottle of house wine for every four paying guests dining in for dinner.
