Tiong Bahru Hainanese Boneless Chicken Rice has been a fixture in the Tiong Bahru neighbourhood since its establishment in 1988. Stall owner, Cheong Weng Wah, worked tirelessly as his fans and popularity grew, eventually winning the Michelin Bib Gourmand in 2016 and since then being recognised yearly till today. Now after many requests from loyal customers, Tiong Bahru Hainanese Boneless Chicken Rice will be expanding into the heartlands, with its first stall in Tampines on 11 November 2021.

The expansion of Tiong Bahru Hainanese Boneless Chicken Rice is made possible through a partner who has over 30 years in the hawker business. Chef Cheong says, “We are expanding as we have had many requests from regular customers who want to eat Tiong Bahru Hainanese Boneless Chicken Rice more often, but without the hassle of travelling to Tiong Bahru from where they stay. We have decided to heed their requests and will be bringing Tiong Bahru Hainanese Boneless Chicken Rice to them! We are excited to bring the same great tasting dishes for more Singaporeans to try.” 

Chef Cheong Weng Wah learnt the ropes of making Chicken Rice from a friend who used to work at Mandarin Hotel – known for its “legendary” Chatterbox Chicken Rice. After much experimentation, he made improvements to the recipe, creating a Chicken Rice that features smooth juicy chicken meat silky chicken skin, and fluffy rice with just a hint of sweetness. The texture of the chicken is testament to his technique as he dunks hot steamed chicken into iced water, a technique he said was a little-known method when he first started out in 80s.

 

Over the years, he has not stopped refining his cooking methods, ensuring his recipe will always meet his high standards. Till today, Chef Cheong insists only fresh and quality ingredients are used for not just the chicken, but the rice as well. Even as the brand expands into Tampines, Chef Cheong will ensure quality is met by doing all the prep work from the main stall at Tiong Bahru Market.
