    Located on the western tip of the West Kowloon Cultural District, the HKPM joins M+, Asia’s first global museum of contemporary visual culture, the Xiqu Centre for Chinese opera and Freespace contemporary performance venue, to take the area to new heights.     The HKPM is a must-visit attraction for arts and culture lovers, and a treasure trove of rare artefacts.     Enhanced “A Symphony of Lights” illuminates new landmarks across Victoria Harbour including Star Ferry

    With Hong Kong’s dynamic skyline as a canvas, “A Symphony of Lights” show takes viewers on a multimedia journey that celebrates the city’s culture and innovative spirit. This month, a special edition of the show will breathe new energy into the city’s popular experience.

    At 8pm every night through July, the captivating spectacle will feature new elements, including a fleet of 6 Star Ferries adorned with glittering light installations, and expand to include new landmarks, such as the HKPM and M+. With an array of distinguished arts and cultural venues and enhanced nightly light shows, visitors can now immerse themselves in a one-day adventure by the waterfront in the refreshed West Kowloon Cultural District.

    Robotic Dinos Took Over Hong Kong Harbour City & Times Square

    To celebrate the 25th Anniversary of the Establishment of The Hong Kong Special Administrative Region, First Initiative Foundation (FIF) joined hands with the Leisure and Cultural Services Department in presenting a large-scale exhibition “The Hong Kong Jockey Club Series: The Big Eight – Dinosaur Revelation” from July 2022, showcasing original specimens of the most iconic fossil skeletons.  

    What’s more, Wharf malls are also working with FIF to present “Flash Pop-up: Robotic Dinos” to display two 1:1 robotic dinosaur installations — the Tyrannosaurus rex (T-rex) and Stegosaurus, respectively at the Group’s flagship retail properties Harbour City and Times Square. As Hong Kong’s first large-scale outdoor exhibitions after the fifth wave of COVID-19, the public are invited to meet these two giants at no fee, take photos and participate in a series of dinosaurs-themed activities.

    Harbour City showcases the fearsome 4.6M high x 12M long T-rex at “Ocean Terminal Deck” on 7 June to 17 July, while Times Square showcases famous Thagomizer tall bearing Stegosaurus that is 3.7M high x 9M long at “Open Piazza” on 7 June to 10 July. These pre-historic animals are scientific accurate and custom-built, which were reconstructed under the supervision of paleontologists and with the latest scientific knowledge about these animals.  They do not only look alive – they breathe and roar just like real living animals.

    Visitors can take pictures with the fascinating creatures for free, with the iconic Hong Kong backdrop — Victoria Harbour from Tsim Sha Tsui and the bustling city in Causeway Bay. Apart from this, the two shopping malls also organize an array of dinosaur-themed activities, allowing you to experience the dinosaur world in an all-around way. All proceeds of the activities will be donated to First Initiative Foundation (FIF).

    Robotic Dinos – Enroll Now To be a Little Dinosaur Expert

    How can the little dinosaur fans miss the rare chance to explore the prehistoric planet? The little dinosaur fans can become dinosaur experts! On every weekend during the exhibition period, kids can participate in the “Robotic Dinosaur Workshop” (around 40 minutes) with a donation of HK$180. The founder of “Dinosaur @ Fossil Lab”, Mr. Lung Tak Chun and his team will teach the participants the history and knowledge of dinosaurs in the Cretaceous and Jurassic, and train a new generation of “Little Dinosaur Experts” in this workshop. Participants can learn about and get up close with paleontological fossils, take pictures with precious paleontological fossils, and use their creativity and imagination to draw their own dinosaurs. After the completion of the workshop, participants will receive special souvenirs.

    Robotic Dinos – Dinosaur Hunt! 

    Kids love a treasure hunt! Starting from 10 June to 17 July 2022 (every Friday, Saturday, Sunday and public holiday), visitors can receive a dinosaur folder and a “Dinosaur Hunting Passport” upon a donation of HK$20 at the starting point of Dinosaur Hunt at G/F, Ocean Terminal, Harbour City.

    All dinosaur hunters are required to follow the instructions to explore the dinosaur stamps scattered in eight different corners of Ocean Terminal, collect all the designated dinosaur-cartoons stamps and answer the questions at each corner. Visitors can redeem a set of eight dinosaur flashcards and a Dinosaur Hunter Certificate upon completion of tasks.

    Each flash card is printed with the various dinosaur portraits, attributes and power levels, which are highly collectible.

    Hong Kong Countdown 2022 will involve a dazzling light art extravaganza, featuring radiant lights along the entire Victoria Harbour waterfront, the city’s flagship Hong Kong Philharmonic Orchestra, and the New Year countdown lights on the recently opened M+.

    Starting on New Year’s Eve, the 65.8-metre-tall LED facade of M+, Asia’s first global museum of contemporary visual culture, will showcase a sweeping, high-contrast visual tale created by talented local digital artists as a homage to the city’s various landmarks, neighbourhoods, and vibrant arts and culture scene. It will be transformed into a countdown clock, which will travel across the rich cityscape of Hong Kong during the final minute of 2021, before eventually splashing the numerals “2022” and New Year’s greetings across its screen as the clock strikes midnight.

    Beneath the bright lights of the prominent skyscrapers ringing in the New Year along Victoria Harbour, the Hong Kong Philharmonic Orchestra, the city’s flagship orchestra and winner of the Gramophone Orchestra of the Year award in 2019, will perform energetic, jubilant music for a global audience in an outdoor concert in the West Kowloon Cultural District as Hong Kong celebrates the New Year.

    Asia’s first and only female chef Vicky Lau of two-MICHELIN-starred Tate Dining Room, honed her talent abroad and returned to Hong Kong to pursue her culinary career. Chef Vicky will be bringing viewers around the neighbourhood of Yau Ma Tei, which is a feature of HKTB’s latest West Kowloon neighbourhood campaign aimed to boost interest in the authentic local cultural aspects of West Kowloon.

    According to Vicky, Yau Ma Tei is a side of Hong Kong where many chefs visit on a regular basis. “This area is where the old meets the new; with so much to discover especially if you are looking for something authentic and truly Hong Kong.  It is a heaven for food lovers as this is where we find gadgets, ingredients and delicious food but there’s so much authenticity to offer. For instance, the Yau Ma Tei Fruit Market (also known as Gwo Lan) is a well-known Hong Kong historical landmark, where there is an abundance of fruits – many interesting ones that sometimes we do not get to enjoy or encounter daily. The pandemic has greatly affected overseas shipment, but I see this as an opportunity to discover and use more local produce for my creations. I am really excited to show the side of Yau Ma Tei, especially from a chef’s perspective!”

    Shane Osborn, Arcane | Hong Kong Chefs’ Playbook: Wong Tai Sin with Shane Osborn | Release date: 28 September

    Bringing viewers through Wong Tai Sin is internationally renowned Australian chef Shane Osborn who received his first Michelin stars in London and moved to Hong Kong to establish his solo one-MICHELIN-starred Arcane Restaurant. He shared that sourcing locally is very important to him and his team at Arcane, “Not only do we get the freshest ingredients, we are also supporting the local farming community.”

    As an expat, Shane constantly discovers new places in Hong Kong. His first time in Chi Lin Nunnery, Shane expressed that Hong Kong is a destination that provides both the bustling city and serene nature experience. “I was blown away by the Chi Lin Nunnery, the tranquillity of this area surprised me the most, especially as it’s so close to one of the world’s most heavily populated districts.”

    Vicky Cheng, VEA | Hong Kong Chefs’ Playbook: Tai O with Vicky Cheng | Release date: 5 October

    Known for his unique Chinese-French cuisine, Chef Vicky Cheng of one-MICHELIN-starred VEA also returned to Hong Kong to pursue his career after living abroad. Through this video series, Vicky Cheng hopes that people visiting Hong Kong can appreciate not only the variety of excellent food, whether it’s street food or from Michelin starred restaurants, but to also appreciate what Hong Kong has to offer in its beauty of its landscape.

    Vicky echoed the sentiments of Shane Osborn. “One of the most beautiful things that I really enjoy about Hong Kong is that one minute you are in the centre of a financial district, and 15 minutes later you are the in middle of a forest, hiking with nothing around you. This is truly the beauty of Hong Kong as we are in the centre of many great cities and countries around us.  I hope visitors can also see what I see; through the lens of someone who was born here, lived abroad and came back; what’s special about Hong Kong, the places that I like to go, things I like to buy and ingredients I like to cook with.”

    Last but most definitely not least, restaurateur Danny Yip, whose iconic one-MICHELIN-starred restaurant The Chairman is known for redefining Cantonese cuisine using local ingredients will bring viewers on a journey through Aberdeen. Through and through Hong Konger, Danny loves walking around the city on foot. “When we explore Hong Kong’s neighbourhoods on foot, we can feel the beat of the city and be able to see what’s in between tourist spots. Those in-betweens are hidden gems that are often the most memorable. That is why we use locally sourced ingredients, products from local condiment stores and seafood from local fishermen as much as possible.”

    A homegrown restaurateur, Danny has seen many talented young chefs emerged in the past decade, wowing diners with new ideas and flavours. “Being a chef has eventually become a cool thing in the city. They are well connected with other parts of the world, socially active and ready to change. The culinary scene in Hong Kong has never been this vibrant and full of energy. I hope that it will stay that way: diversified, personal, creative, and interesting.”

    Once reserved for the crème de la crème of restaurants in Europe, the renowned MICHELIN Star rating system now stretches across the globe as culinary art continues to grow with talents discovered and recognised across various cultures and cuisines. When the MICHELIN Guide debuted in Hong Kong in 2009, it awarded 31 stars to 22 restaurants. Today, Hong Kong is home to a total of 95 MICHELIN stars awarded to 69 restaurants.

    As the world continues to battle and does its part to fight the Covid-19 pandemic with further travel ban extensions, HKTB and Michelin aim to spark culinary inspiration whilst enabling audiences around the world to indulge in local neighbourhood tours and reminding them of what awaits them in Hong Kong when travel normalises.

    Impossible Foods announced the commercial launch of Impossible Pork Made From Plants, available in restaurants in Hong Kong starting on 4 October and in Singapore later this fall. Chef David Chang will debut Impossible Pork at his famed Momofuku Ssäm Bar at Pier 17 in New York City beginning tomorrow. Pork from pigs is one of the most consumed proteins in the world, and Impossible Pork is designed to be more delicious and far more sustainable while satisfying every culture and cuisine.

    Impossible Pork – The Competition With Real Meat

    Restaurants across Hong Kong and the United States can now order Impossible Pork for their menus from major foodservice distributors. In a blind taste test of more than 200 consumers in Hong Kong, Impossible Pork Made From Plants was preferred 54% to 46% over ground pork from pigs, scoring higher on all attributes tested, including overall liking, appearance liking, flavour liking, texture liking, and purchase intent.

    Impossible Pork is vastly more sustainable than ground pork from pigs, using 81–85% less water, 66– 82% less land and generating 73–77% less greenhouse gas emissions based on an ISO conforming Life Cycle Assessment.

    “Earlier this month, we beat the animal with the launch of Impossible Chicken Nuggets,” said Dennis Woodside, president of Impossible Foods. “With Impossible Pork, we’re beating the animal again while satisfying even more types of cuisine — another important step towards making the global food system much more sustainable.”

    Like meat from pigs, Impossible Pork features a mild savoury flavour and balanced umami richness without being gamey or overpowering. It can be served in any ground meat dish including spring rolls, meatballs, dumplings, xiao long bao, shumai or tacos, and can be cooked in a steamer, oven, charbroiler, flat-top grill or sauté pan.

    Impossible Pork – How The Facts Stack

    Impossible Pork is certified gluten-free and contains no nitrates. Compared to a 4-ounce (113-gram) serving of 70/30 U.S. Department of Agriculture ground pork, Impossible Pork contains 37% fewer calories (220 vs. 350 calories), 59% less total fat (13 grams vs. 32 grams), 36% less saturated fat (7 grams vs. 11 grams) and 2.7 milligrams compared to 1 milligram iron per serving for pork from pigs. Impossible Pork contains 0 milligrams of cholesterol (7 grams saturated fat and 0 grams trans fat) per 4-ounce serving (113 grams).

    Impossible Pork – Quintessential Asian Cuisine

    David Chang was the first chef to launch Impossible Foods’ flagship ImpossibleTM Burger on the menu of his famous Momofuku Nishi hotspot in 2016, and he launched Impossible Chicken Nuggets earlier this month at his fried chicken concept Fuku. Beginning tomorrow, Impossible Pork will be featured on the menu of his acclaimed Momofuku Ssäm Bar at Pier 17 in one of the restaurant’s most iconic dishes – Spicy Rice Cakes – now served with ImpossibleTMPork Ragu.

    “Our menu calls for high quality, versatile ingredients, and Impossible Foods’ products always deliver,” said Momofuku culinary director Max Ng. “Impossible Pork replicates the delicious flavour and juiciness of pork, making it a perfect fit for one of our most iconic dishes.”

    Chef May Chow was one of the first Hong Kong chefs to launch the Impossible Burger when it debuted in the region in 2018, predicting that it would “take [the] city’s world-class restaurant scene by storm.” On Oct. 4, Chef Chow will debut Impossible Pork dishes at Little Bao, which will serve a Taiwanese “LuRou” Scotch Egg, and Happy Paradise, which will serve ImpossibleTM Dan Dan Noodles.

    “Minced pork is central to so many classic Chinese recipes from dumplings to spring rolls to dan dan noodles. I’m thrilled we now have a more sustainable alternative that does not compromise on the original diversity, deliciousness, and depth of everyone’s favourite recipes.”

    Impossible Pork – Availability In Hong Kong & Singapore

    Starting Oct. 4, Impossible Pork will be served at more than 100 restaurants in Hong Kong, across a variety of cuisines, from dim sum and classic Chinese to Japanese and Thai.

    Globally acclaimed dim sum chain Tim Ho Wan, known as the “world’s cheapest Michelin-star restaurant,” will be offering four new signature dim sum and rice dishes at all of its Hong Kong restaurants. Other local favourites to debut Impossible Pork in Hong Kong including Dumpling Yuan, known for its authentic Northern Chinese style dumplings; Bloom by Wong Jia Sha, a modern Shanghainese restaurant; and Kyoto Katsugyu, a Japanese katsu favourite.

    Chinese fast-food chain MX of Maxim’s Group in Hong Kong will launch its Eggplant & ImpossibleTM Pork Casserole dish at 45 locations across the city, becoming the first quick-service restaurant in Hong Kong to serve an Impossible product.

    The Tong Chong Street Market in Taikoo Place will feature numerous Impossible Pork dishes throughout October, with 15 participating restaurants giving away ImpossibleTM Pork Bento Boxes to celebrate the launch.

    In Singapore, Impossible Pork will land in November on the menus of a number of new and returning customers, including Privé, PS. Cafe, Da Paolo and Moonbow Dempsey, a well-known fusion restaurant from Ironman Chef Heman, who will serve a Crispy Cheesy ImpossibleTM Pork Ball.

    The Hari Hong Kong – Vision & Concept

    It was the sweeping vision of Harilela Hotels Ltd, Chairman and CEO Dr. Aron Harilela, a Hong Kong native whose family has resided in the city for five generations, that brought the hotel to fruition. “We’re pleased to bring our very own brand, The Hari, from London to Hong Kong,” he says, “This is our home and I remain incredibly optimistic about its future. I see The Hari Hong Kong as a beacon for the city, and my hope is that its opening sends a clear and strong message of our confidence in what lies ahead.”

    The Hari is renowned for its relaxed sense of elegance punctuated with a touch of wit, which is put on full display in its 210 guestrooms, including three rooftop suites, and dining outlets. Dr. Harilela appointed Tara Bernerd, the founder of Tara Bernerd & Partners, a leading international interior architecture and design practice based in London. Dr. Harilela and Bernerd have worked together for many years to create the ultimate home away from home – starting with The Hari London in 2009, and now, The Hari Hong Kong. In addition, Atkins, a global architecture firm with offices in Hong Kong, London, the US, and Dubai, was commissioned to deliver the project from concept through to contract administration.

    Working together for the last ten years, Dr. Harilela and Bernerd drew upon the local dynamism, culture and history to create a sense of being and belonging in The Hari Hong Kong. Dr. Harilela’s belief in Hong Kong crystallized five years ago when he identified the site as “a pocket right in the heart of the most bustling parts of town, in the middle of Wan Chai and Causeway Bay.”

    “We aimed to create a hotel that felt as though you were walking into the most elegant of Hong Kong homes when you arrived. Like a tailored suit, it brings a London attitude to Hong Kong,” Bernerd says. “We sought to contrast the commercial heritage of the neighbourhood with a modern, forward-looking attitude.”

    The Hari Hong Kong – Guest Rooms & Interiors

    In a nod to The Hari London, a petrol blue lacquer panelling accents various surfaces. The rest of the palette is dominated by amber leathers, grey marble, and neutral textured linens. Materiality is key, with a mixture of tweed and velvet fabrics in a rich jewel palette of blues, greens, and earthy tones. Timber, marble and fluted surfaces feature prominently.

    The guestrooms are carefully designed to maximise the space by opening up the bathrooms and wardrobes, while a system of antique-brass Crittal doors enables the bathrooms to be closed off when necessary. 

    A dramatic open plan is employed in the standard King Rooms and Twin Rooms, allowing a two-seater sofa to be included in every room. The fluted bedhead is finished in a deep amber textured fabric, while the bathroom is finished in a rich marble with a bold green vein. Antique brass elements frame the bathroom mirror and the structure of the wardrobe.

    Corner Rooms, larger than the standard guestrooms, are similarly designed with an open layout and the addition of a dressing room. Corner Rooms offer views of the buzzing Causeway Bay district, while Premium Corner Rooms overlook Wan Chai and Admiralty.

    Rooftop suites, which include the opulent The Hari Suite, exude a masculine edge that is at once traditional and timeless. Each suite houses a five-piece bathroom, a separate sitting room and its own private terrace. A warm palette of navy and grey tweeds and velvets contrast beautifully with the yellow velvet sofa. Echoing mid-century modern inspiration are bespoke timber credenzas, floor lamps, glass-topped marble coffee tables, armchairs and poufs.

    The Hari Hong Kong – Wine & Dine Experience 

    Exuberant and timeless at the same time, The Hari Hong Kong’s restaurants are set to become exciting new additions to the city’s coveted dining destinations, lending flair and allure to The Hari experience.

    The Italian restaurant, Lucciola Restaurant & Bar, is a bastion of old-world glamour and a contemporary ode to heritage flavours, delivering beloved classics with a modern twist. To encapsulate the spirit of Italy, verve and drama are introduced into space with timber-lined walls, contrasted by one long gallery wall finished in Tadelakt polished plaster. 

    The Japanese restaurant, Zoku Restaurant & Terrace, located one floor above, presents a refreshing take on Japanese cuisine focused on quality and ingenuity. Split into a lounge-style area and a dining area, Zoku’s palette of pink shades brilliantly counter khaki velvet banquettes, leathers, patterned fabrics and sculptural furniture, all punctuated by origami-like accents in a tasteful tribute to Japan.

    Meanwhile, the terrace bar is designed to host from day through the late evening. Long banquettes set with tables and chairs are punctuated with a mix of neutral linens and patterned aqua textiles. A spectacular wall of patterned book-matched marble is set immediately on the façade, on top of which a three-storey green wall brings an oasis-in-the-city feel to the space.

    Man Wah Hong Kong, one of Mandarin Oriental, Hong Kong’s signature Michelin-starred restaurants, ushers in a new era of Cantonese fine dining when it re-opens on 1 February 2021. Enjoying sweeping views of Victoria Harbour’s iconic skyline coupled with revitalised interiors that exude understated luxury, the dining institution continues its legacy as an exquisite homage to time-honoured Cantonese cuisine under the stewardship of Executive Chinese Chef, Wing-Keung Wong.

    Man Wah Hong Kong – Featured Dishes In New Menu

    Guided by Chef Wong’s mission to deepen appreciation for Cantonese cuisine, Man Wah’s new menu features refined classics as well as offering diners the opportunity to discover often overlooked culinary gems and forgotten delicacies. These include:

    Deep-fried Matsutake Mushroom Pudding (HK$ 360 for six pieces), also known as guo-ja, can be traced back to the veritable Qing Dynasty epicurean Jiang Taishi. In lieu of chicken testicles used by the former, Chef Wong has developed a vegetarian rendition, employing highly prized Japanese matsutake mushrooms, egg yolks and cornflour to make an intensely aromatic soup that is frozen and then deep-fried. Presented with a golden but delicate exterior, each bite bursts to reveal smooth and tender redolent custard that has an earthy, pine-like fragrance.

    A technically demanding delicacy that is vanishing from the city’s eateries specialising in siu mei, which means roasted meats, Chef Wong’s Classic Barbecued Duck Feet Roll (HK$ 168 per piece) was inspired by a request from a regular guest. During the restaurant’s closure for renovation, Chef Wong set off to learn the culinary tradition of this particular dish from a group of older generation chefs. His refined interpretation sees deftly deboned duck feet, barbecued pork, pork belly, marinated chicken liver and taro wrapped in duck intestine, roasted and sliced into medallions of contrasting textures and flavours. Due to the time-consuming preparation, this must be pre-ordered 24 hours in advance.

    Man Wah Hong Kong – Signature Dishes

    At the same time, diners will delight in new Man Wah signature dishes including the following:

    Stewed White Fish Maw, Superior Soup (HK$ 528) is an ode to two Cantonese traditions – broth, a nourishing staple for every meal, and hoi mei, dried seafood which is an essential ingredient. A ubiquitous staple of Chinese restaurants, Man Wah’s version highlights white fish maw for its medicinal value and gelatinous yet delicate texture. The fish maw is poached in a superior collagen soup, made by simmering chicken, pork leg, pig trotter, duck, chicken feet and a pinch of saffron simmered over 12 hours.

    A dish often eaten during Hakka celebrations, Braised Pork Belly, Taro (HK$ 168) pays tribute to the dying art of village cuisine. Chef Wong has taken this recipe and refined it for the modern palate. Taro planks are first deep-fried to ensure the root vegetable retains its structure during the braising process. Pork belly is submerged in boiling water for 40 minutes then brushed with soy sauce and dark soy and deep-fried until the skin is rendered crispy. The taro and pork belly slabs are then stacked together, cloaked in fermented red tofu sauce and steamed together to allow the fat and juices of the pork to seep in as well as flavour the taro.

    Baked Lobster, Superior Fish Broth (HK$ 588) sees grouper bones boiled for three hours to create a rich stock that enhances the inherent umami of the lobster from Hong Kong. Taking inspiration from the use of freshly shaved truffles in Western cuisine, Chef Wong puts a modern spin on karasumi, Japanese dried and salted mullet roe. French caviar is dehydrated, rolled and frozen overnight, then shaved over the dish tableside for an added delicate brininess while sake-marinated salmon roe finishes the dish with pops of fresh salinity.

    The Pan-fried Scallop and Bean Crumb (HK$ 198) features a succulent scallop from Hokkaido, Japan, lightly seared and garnished with sweet, crunchy soybean crumbs from Fujian province in China. This ingredient is often favoured in Chinese fish cookery for its toasty, nutty notes. Drawing influence from the Nordics, a dab of garum of fermented scallop skirts brings complexity to the dish.

    Man Wah Hong Kong – Accompanying Beverages

    Man Wah will also offer a comprehensive beverage programme and diners can opt for wine and tea pairing. Highlights include a house-made blend of wild chrysanthemum oolong tea which uses a slow drip method, and is distilled one day in advance and served as a refreshing welcome drink for all guests to cleanse the palate before the meal. Along with an extensive collection of premium and rare teas, a sparkling signature blend of Chinese rosella, Earl Grey and strawberry green tea can also be enjoyed, which is cold brewed for 18 hours.

    Established and rising China-grown wines and spirits will be featured together with handcrafted fruit-infused rice wine as well. Guests will delight in original aperitifs including a baijiu cocktail which combines lime and tonic with the traditional Chinese spirit, offering a refreshing balance of flavours.

    Man Wah Hong Kong – Interior Dining Space Design

    Designed by Silverfox Studios, Man Wah’s refreshed interiors frame Hong Kong’s renowned city skyline and the iconic Victoria Harbour as the main attraction seen from the 25th floor of the iconic hotel.

    A back-lit square grid ceiling covers the main dining room to accentuate the sparkling cityscape, while the walls are decked in dark azure lacquered panels inlayed with brass. Chinese embroidered art panels, framed artwork and delicate embellishments impart a sumptuous elegance to the dining experience. The intricate layers of blue and gold hues in the hand-woven carpet mirror the rippling water of Victoria Harbour.
