    Since 1943, Thye Moh Chan has been creating the finest of Teochew pastries by meticulously crafting each piece by hand. The mung bean paste filling, a key feature in Teochew pastries, is produced after five hours of soaking, steaming, hand-grinding, drying and temperature- controlled cooking. Just like the brand’s signature Tau Sar Piahs, these seasonal mooncakes also boast light, flaky layers of pastry and fillings that are created using authentic quality ingredients and traditional baking techniques.     Savour Singapore Heritage Hawker Dishes At Shangri-la Hotel Lobby Lounge

    Experience Singapore’s unique hawker delights like the locals, albeit with a refined twist, with every visit to The Lobby Lounge, at the newly renovated Tower Wing of Shangri-La Hotel, Singapore. Redesigned and revitalised, the lounge now offers a delicious spread of local heritage hawker dishes, crafted with finest quality ingredients, and cooked to perfection.

    Six signatures anchor the menu, each inspired by the flavours and culinary techniques of those who know this best in Singapore: Bak Chor Mee with Fish Maw Soup ($24), Hainanese Chicken Rice ($20), Fish Bee Hoon ($24), Prawn Noodle Soup ($26), Katong Laksa ($18), and Chilli Crab and Mantou ($26).

    The Bak Chor Mee with Fish Maw Soup from Seng Kee Mushroom Minced Meat Noodle will win over the palate with its signature fish maw broth served in a heated claypot that is brewed from pork bones and dried sole, served alongside ingredients of minced pork, pork slices, egg, seaweed, and stewed mushroom slices.

    The Chilli Crab and Mantou was selected from an original recipe by Dragon Phoenix restaurant. This sweet and spicy crustacean dish traces its beginnings from a humble pushcart along East Coast Road in 1956. Decades later, Dragon Phoenix Restaurant’s Chef Hooi added sambal and eggs to the recipe to enrich the gravy, resulting in the well-loved version that it is today.

    Another dish to have is the Katong Laksa, featuring short, thick rice noodles served in a broth made from coconut, flavoured with dried shrimp and fragranced with laksa leaf. The recipe at the Lobby Lounge is inspired by the Original Katong Laksa aka Janggut Laksa in Katong, an icon served since the 1950s.

    All six signature dishes are available on the à la carte menu daily from 11.30 am to 10 pm or as part of the local semi-buffet lunch priced at $38++ during weekdays or $45++ during weekends. The semi-buffet lunch encompasses a wide selection of local appetisers and desserts and a choice of one of the six signature dishes.

    Be spoilt with options such as Kueh Pie Tee and Popiah that are prepared à la minute, and sweets such as assorted Nonya Kueh, Cheng Tng (a local dessert soup) and Tau Suan (split green bean soup). The items change daily so dining every day at the Lobby Lounge will always excite the taste buds.

    Afternoon Tea: A Three-Tier Local Signature Set

    Come mid-afternoon, The Lobby Lounge transits to afternoon tea, offering a Three-Tier Local Signature Set. Succulent local delicacies are recommended to be paired with coffee or tea.

    Alternatively, select a beverage from the Local Favourites section, such as Teh Tarik ($8), Asia’s favourite piping hot milk tea, Chin Chow ($8), a black grass jelly drink, and Milo Over-The-Top ($12), an elaborate chocolate and malt extravaganza.

    For those peckish moments, Ngoh Hiang ($14) is the way to go, available on the à la carte menu from 2.30pm onwards. Adapted from East Coast Ngoh Hiang’s most popular item, it is a roll of minced pork seasoned with five spice powder, wrapped in tofu skin and then deep fried.

    All the food is served on Peranakan crockery – think colourful motifs of nature that lend an authentic touch to the dining experience. Touch and taste aside, in between courses, pause for a moment to enjoy the elegant and relaxing atmosphere, complemented by impressive soaring columns that heighten the double volume space, floor-to-ceiling glass windows that let in natural light, and plush sofas in leather and fabric.

    But the best seats in the house must surely go to those facing the dramatic feature wall, with its cutting-edge design by Australian award-winning and celebrity landscape designer Charlie Albone. Measuring 9m by 6m, it took a team of three botanists and six specialists over 700 man-hours to install. Growing into the basalt rock are nine different types of living plants as well as some artificial ones. Spot the distinctive Rabbit’s Foot fern, the delicate Baby’s Tears and the pretty purple flowers from the Spanish sprawl.

Every day from 6pm to 8pm, with any order of cocktails or selected wines, DRINK offers its customers complimentary canapés specially curated by Chef Simone Depalmas, who oversees the Singapore outpost of FOO’D.

    DRINK is located within the iconic Victoria Theatre & Concert Hall. The interior, with its high ceilings and Corinthian columns, is modern and sleek. The alcohol and wine bottles are also gloriously arrayed on glass shelves. Offering affordable alcoholic beverages in a classy and cosy environment, DRINK is an ideal address for gatherings with friends, colleagues or loved ones after work.

    It is helmed by award-winning mixologist Mike Cheong, who has won eight international and regional awards under his belt, including Asia’s Grand Champion in the 2015 La Maison Cointreau Cocktail Competition.

    Savour new exquisite cocktails that are the original creations of Mike, including Guilty As Charged (S$20). This eye-catching cocktail is one for the senses, starting with the cotton candy as a garnish to the smell of perfume emanating from the ribbons tied to the glass. It is impeccably balanced with sweetness, acidity and texture courtesy of the foam floating on the sea of pink liquid.

    Another attention-demanding offering is the Give Me My Alimony (S$18), an invigorating drink with grapes as the marquee ingredient. The recipe calls for cachaça 51, lime, vanilla as well as freshly muddled cherries and grapes. The grapes go through a carbonation process that adds extra dimension and depth to the cocktail.

    Then move on to the Court Adjourned! (#letsgodrink) (S$18), a sparkly tour de force made with Gryphon’s award-winning Pearl of Orient tea. It is fruity with hints of melon and floral notes from the rose petals.

    Want a taste of Mike’s creativity? Spend S$100 on alcoholic beverages, and he will then concoct a complimentary bespoke cocktail named after you. Choose from your favourite spirit, and share with Mike your preferred flavour and texture.

    Going Green

    DRINK is a responsible cocktail bar that is big on sustainability. It grows a medley of herbs such as rosemary, citronella, lemon balm, mint and basil in its garden, and the cocktail menu is planned around these existing ingredients. Doing so allows it to minimise its carbon footprint. Every ingredient is used to its fullest potential. For example, the citrus fruits are used in the cocktails, their zest for syrups and the remnants are turned into compost for the herb garden. The egg yolks are kept for use by the pastry kitchen, and the shells are also turned into compost.

    At DRINK, wine lovers will be able to meet one of Asia’s best sommeliers, Alan Au, a homegrown talent who has won many accolades. Alan is the inaugural winner of the 2016 Ruinart Challenge and was also awarded the 2016 Sommelier of the Year title by World Gourmet Summit. He is the only Singaporean to have achieved the Sommelier Diploma awarded by the Association de la Sommellerie Internationale.     Yellow Ribbon Prison Run 2017 – Take That Chance, Make YR Change

    Yellow Ribbon Prison Run 2017 is back. The annual run which shows support for ex-offenders and second chances to create possibilities for their re-integration happens on 17 September 2017 (Sunday). The run this year will feature competitive and fun run categories for individual runners and the Run for Second Chances category for teams. Proceeds raised from the run will go to the Yellow Ribbon Fund, which supports rehabilitation and reintegration programmes for ex-offenders, and support programmes for their families and their children. 

    Significance Of Yellow Ribbon Prison Run? 

    Every year, over 9,000 ex-offenders complete their imprisonment and are released from the various prisons and drug rehabilitation centres (DRCs). It is disheartening that ex-offenders have to live with the stigma of having served time behind bars when they have already served their dues in prison, one that can often be more punishing than the prison sentence itself. Many ex-offenders, once released, find themselves literally stepping into a second prison in life. This time it would be a prison with invisible bars, of suspicion, mistrust and discrimination.

    The best rehabilitation regime during incarceration will be of little use if ex-offenders find themselves rejected at every turn when they are released back into the community. The Yellow Ribbon Project hopes to promote a more accepting society, one that is willing to give ex-offenders a second chance at making good of their lives. It is important that we help unlock the second prison for our inmates, even as we let them out of the physical one.

    Hattendo, Japan’s famed cream bun maker introduced a brand new product – Hattendo cream muffins. As part of their new cream muffin series, the Japanese bun maker specially created the Singapore Cream Muffin in time to celebrate Singapore’s 52nd birthday. These lovely muffins will make its debut at Singapore Coffee Festival 2017 and will be sold at the Hattendo Cafe exclusively from 7 to 13 August 2017.

    Hattendo, a three-generation bakery was originally established as a Japanese traditional confectionery shop in Hiroshima, Japan since 1933. Takamasa Morimitsu, the grandson of the founder brought the drastic change in the family business by focusing only on cream buns in 2007. The company since has shops in Korea and Singapore, with 25 outlets across Japan.

    What’s Special About Hattendo Cream Muffins?

    Propeller – Singapore’s Latest Rooftop Bar Opens At HarbourFront

    Propeller, Singapore’s latest rooftop bar in the Harbourfront district has opened at Bay Hotel Singapore. This marks the launch of the hotel’s signature bar brand across all current and future Bay Hotel properties. Overlooking the Keppel Harbour and Sentosa, Propeller makes for a breezy chill-out spot with friends and colleagues or for entertaining clients. On selected evenings, one can also enjoy the fireworks erupting from across the Sentosa Broadwalk as you lounge on cushy sofas on the hotel rooftop.

    Besides the amazing panoramic views, Propeller’s main draw is its specialty cocktails, the creations of Bar Manager Farhhad previously from Lantern and House @ Dempsey.  The signature Propeller Bay ($19), likely a lady’s favourite, is made using 42 Below vodka mixed with orange juice, raspberry syrup and thyme. It is then topped with a layer of homemade lime espuma, which can be torched into lime meringue for that extra bite.

    Be sure to have a Mozartz ($19), also a signature drink – a concoction of chocolate liquor, Campari, Campano Antica Vermouth, orange foam and house-made Campari dust – if you enjoy a sweet drink that comes with a bittersweet aftertaste.

    Singapore Coffee Festival (SCF) 2017 is back to stimulate your taste buds with a spread of brewing workshops, home roasting demos, flavour profile discovery classes, café talks and coffee degustation sessions. Singapore’s only coffee-centric festival will also host Singapore Aeropress Championships 2017 and the largest-ever unique cashless Barter Market, featuring more than 20 local makers and artists and presented by urban artist Sam Lo’s Indigoism outfit.

    The four-day festival, which debuted as a sell-out event in 2016 will return from 3 to 6 August (Thurs – Sun) at the spacious seaside venue Marina Bay Cruise Centre. This year, you and your coffee mates can look forward to two new perks: the SCF Coffee Card, which entitles its holder to exclusive discounts at more than 30 cafes and F&B establishments throughout the month of August as well as the festival sampling experience, where each ticket-buyer can redeem two sample beverages from participating exhibitors at the festival.

    Other highlights this year will include interesting workshops on leather-crafting, candy-making and #nofilter photography, morning yoga and family-friendly activities such as storytelling sessions. Arts will also play a big role in this year’s festival with the theme “espresso’self”. Singapore Writers Festival (SWF) will conduct SWF POP @ Coffee Festival, where two teams of writers and artists compete to produce poetry/prose and illustrations based off coffee-related prompts from the audience.

A new light Herringbone floor and colour scheme centred on a grey, burnt orange and ivory theme, along with redesigned furnishings and new drapery by Jim Thompson have visually revitalised the interior, giving it a more lively contemporary ambience while drawing in, and transforming, the brilliant ochres and purples when the sun sets.

    There is also the brand new Fullerton Boutique, located at the restaurant entrance leading from the hotel, which offers a selection of signature patisserie and whole cakes, both Western and Asian, including plain cheesecakes with house-made compotes of mango, strawberry and lemon curd to top them with.

    Brasserie Classics & Cuisine Du Soleil

    The food of La Brasserie is a harmony of French brasserie classics and dishes that have the hallmark of ‘cuisine du soleil’. This ‘cuisine of the sun’ is the representative food of the South of France, a region that is said to be blessed with the sun for 330 days of the year. It is a cuisine characterised by Mediterranean flavours and a lighter touch, with ingredients that evoke the ‘essence’ of the sun.

    Highly recommended ‘sun-blessed’ dishes on the menu include Sautéed Prawns and Chorizo ($21++), Aubergine Caviar Tartine ($19++), Cabillaud a la Grenobloise – Roasted Cod ($46++), and Lobster a L’Americaine ($68++). Complementing the food is La Brasserie’s fine wine library, featuring a selection of global wine labels.

    La Brasserie serves lunch and dinner in à la carte and set. Health-watchers will find the Healthy Lunch set menu appealing with a specially prepared Organic Salad Bar option, featuring items such as Pasta Salad, Caprese Salad and Buffalo Mozzarella, a Fresh Garden Selection, as well as Chilled Vegetables and condiments.

    The Starter, Main Course and Dessert selections offer a curated range of delicious wellness-focused dishes. For weekend dining, there is the Saturday brunch featuring a create-your-own Bloody Mary station and a Sunday Champagne brunch with a dedicated kids’ corner.

    Epicurean Market 2017, the hallmark food and wine celebration at Marina Bay Sands is back from 11 – 13 August 2017. You are in for a treat with offers ranging from Michelin-starred signature bites, rare whiskies and spirits, farm-fresh produce to stellar master classes across three expansive halls. With 4 years of experience under their belt, the organizers of Epicurean Market are gearing up to make its fifth-year milestone the best edition yet! 

    Signature bites from over 20 restaurants

    Enjoy a grand culinary tour at over 20 restaurants in Marina Bay Sands as they dish out their signature entrees at Epicurean Market. This year, you as the ticket holder will get to enjoy a free signature dish worth S$15 from participating restaurants such as Adrift, Bread Street Kitchen, CUT by Wolfgang Puck, db Bistro & Oyster Bar, LAVO, Osteria and Pizzeria Mozza, RISE, Spago, The Bird Southern Table & Bar and Waku Ghin.

    One of the complimentary dish includes Bread Street Kitchen’s signature Fish & Chips, one of the best-sellers during last year’s Epicurean Market.

    You can also enjoy a sneak peek at the highly-anticipated LAVO, a multi-concept restaurant, lounge, bar and nightclub from New York and Las Vegas that will be opening at Sands SkyPark soon. Upcoming French tearoom and patisserie Angelina Café, which has charmed generations of creative forces such as French writer Marcel Proust and powerhouses such as Coco Chanel, will also present its delicatessen and signature hot chocolate.     Local cuisine will take on centre-stage this year. The newly refurbished RISE international buffet restaurant will present the best of multi-cultural Singaporean delicacies – including its specialty 48-hour slow cooked braised beef brisket – at the new Singapore Street Food experience, set in a traditional two-storey shophouse. You can look forward to live cooking demonstrations, and indulge in local dishes such as Teochew Png Kueh, Roti Prata and Rendang Pipi Daging (braised wagyu beef cheek rendang with turmeric ginger rice).

    Folks who are into wines and spirit are also in for a treat as Epicurean Market welcomes five bars and 35 wine booths this year, the largest beverage programme put together so far. Diageo is making a big splash at this year’s Epicurean Market with five specialty bars which includes the new Kampung Bar, a Tanqueray Garden serving up the well-loved Gin and Tonic, the signature World Class Bar helmed by Singapore Diageo Reserve World Class Winner 2017 Sin Kim Shin, a Whisky Lounge and the Singleton Sensorium.

    The Kampung Bar will showcase four of its original cocktails. These concoctions that highlight local flavours were created by Singapore Diageo Reserve World Class Winner 2016 Boo Jing Heng. The Singleton Milo Peng is a sweet and rich flavoured twist on an all-time favourite with Singleton of Glen Ord 12 years old and milo powder.

    Other cocktails to look out for is the Ketel One ABC, a refreshing mix of beetroot, apple, citrus and elderflower with smoky aromas of beetroot infused Ketel One vodka

    or the Laksa Remos, a creative spin on the classic ramos gin fizz with Tanqueray London Dry Gin, lemon, egg white, coconut, laksa leaves and soda water.

    Lastly, the Kaya Sour is a sweet and sour combination of Bulleit Bourbon, kaya, Frangelico, egg white and pandan bitters.

    Wine connoisseurs can look forward to the largest showing of wine vendors this year at the Wine Walk, including TTG Wines, Alfa International and Asia Wine Network which will be showcasing a range of organic and biodynamic wines. Japanese wine and sake lovers will be delighted with Epicurean Nomads and Kirei Japanese Food Supply who will offer tastings and special prices for Japanese wines, sake and beers. Anchor participants including KOT Selections, Monopole, Singapore Straits Wine Company and Le Vigne will also be present.

    Complimentary Master Classes

    Beyond the feasting, you can experience plenty of non-stop action at the auditoriums as industry gurus gear up for 27 complimentary master classes on food, wine, and spirits.

    You get to pick up tips from renowned chefs such as two-Michelin starred chef Tetsuya Wakuda (Waku Ghin), Nancy Silverton (Mozza), David Myers (Adrift), David Thompson (Long Chim), Hide Yamamoto and Javed Ahamad (Punjab Grill) on mastering their respective cuisines.

    Gibran Baydoun, General Manager of Adrift, will host a session on how to create an epic bar experience, together with his new bartender Voltech Bazant. At the Bread Street Kitchen, Bar Manager William Pravda will teach participants how to build a home bar. The Mystery Box Challenge, the festival’s epic culinary showdown, will pit Sabrina Stillhart (Executive Chef of Bread Street Kitchen) against three-time winner Jonathan Kinsella (Executive Chef of db Bistro & Oyster Bar). Award-winning sommeliers Britt Ng from Bread Street Kitchen and Erwin Tang from Osteria Mozza will also battle it out at the first-ever Blind Tasting Battle.

    The Connoisseur Series

    Back by popular demand, the Connoisseur Series is a selection of premium master classes led by the finest food, wine and spirits experts in the business.

    For the first time at Epicurean Market, you can get up close with Ivan Karlić, a third-generation truffle hunter from the Buzet region, the truffle capital of Istria in Croatia, on his stories about truffle hunting and tasting. For generations, the Karlić family hunts truffles with their dogs in oak forests and is renowned for taking visitors on a breath taking truffle-hunting experience. In this exclusive master class, Ivan Karlić will share his experiences and provide cooking demonstrations with his prized truffles.

    Folks who love Japanese whisky will be delighted with three specially curated master classes presented by East Asia Company & Far East Whisky. Experience a tour of rare Japanese whiskies in the Japanese Aged Single Malt & Blended Whiskies master class, or taste the Customized Yamazaki 12, Hakushu 12 and Hibiki 12 from miniature American charred White Oak Barrels in this special master class. The Karuizawa and Chichibu masterclass will also feature some very old and rare malts from new award-winning Japanese distilleries.

    You can pick up fresh produce at close to wholesale prices at the Farmer’s Market where produce is air-flown from Asia, Europe and North America. This year, expect a larger selection of craft beer and juices as well as take-home goodies from Chef Daniel Boulud’s Épicerie Boulud that will feature an expanded selection of pastries and desserts made on the spot. The Mozza booth in the Farmer’s Market will also offer fresh hand-made pasta and its exclusive spice rubs.
