Christmas for Chef Damian D’Silva is a time of warm gatherings, and sharing in lively feasts with friends, family, and neighbours. At Rempapa, all are invited to join in the joy of the occasion with a celebration of beloved heritage flavours. From 2 to 31 December 2023, a selection of Christmas delights are available for dine-in and takeaway.

For the season, Chef Damian presents a Pork Knuckle Debal ($98). This dish, traditionally made with an amalgamation of leftover meats from festive feasts, fondly recollects memories of celebration. On Boxing Day, the table was perennially set with granddad’s spicy stew — a labour of love, meats and mouth-watering aromatics simmering for hours on the stove. Damian’s rendition of the Eurasian classic features roast pork, smoked pork knuckle and potatoes flavoured richly with a rempah of shallots, Bombay onions, ginger, and dried chilli. Offered for dine-in and takeaway, this heartfelt nod to tradition is a celebratory must-have.

Moist and buttery, the Sugee Cake ($95) satisfies as a sweet treat or an after-meal finish. This Christmas, Damian’s take on the confection features light sugee frosted and filled with gula melaka buttercream, the fragrant bake complemented by the delight of a well-loved flavour. Atop the cake rests a crumble of Biscoff cookies, adding hints of cinnamon and textural interest to the toothsome dessert. Baked to order per request 5 days in advance here, the whole cake is available for takeaway, a la carte or bundled with Rempapa’s signature kuehs. In the spirit of the season, delight loved ones with the gift of heritage flavours. Rempapa’s Heritage Gift Box ($98) is replete with two variations of curry powder — spice mixes for meat and fish curry, balanced and masterful blends of aromatics such as cumin, fennel, coriander, black peppercorn, fenugreek, and turmeric. Two signature sambals furnish the thoughtful curation. The Sambal Hijau acquires its distinct green from green chillies and green tomatoes, with the added zest of lime.

Sambal Juliana is a well-loved Eurasian chilli paste of shallots, shrimp paste, chillies, lime juice, and gula melaka. Completing the selection is a jar of salted fish pickle, a long-hailed recipe of salted fish with ginger, garlic, cumin, fennel, coriander, and mustard seeds that poses the perfect accompaniment or flavour boost to any culinary creation. The gift box is available for retail at the restaurant and delivery via Oddle.
